Brown Sugar Shortbread Cookies

These melt-in-your-mouth cookies only need 3 ingredients and are SO worth the calories!

Ingredients

  • 1 cup butter, softened

  • 1/2 cup packed brown sugar

  • 2-1/4 cups all-purpose flour

Instructions

  1. Preheat oven to 300°F.

  2. In a large bowl, cream butter and sugar until light and fluffy. If you don’t have a hand or stand mixer, you can just use a big wooden spoon to stir. Make sure to put in all your energy!

  3. Gradually stir in flour and mix well. Turn onto a lightly floured surface and knead until smooth, about 3 minutes. Pat into a 1/3-in.-thick rectangle measuring 11 in. x 8 in.

  4. Cut into strips and place 1 inch apart on a baking sheet lined with parchment paper.

  5. Prick with a fork and make whichever pattern you like! Sprinkle brown sugar on top.

  6. Place sheet into freezer for 10 minutes.

  7. Take out and place into the oven.

  8. Bake at 300°F for 25 minutes or until bottoms are lightly browned. Cool for 5 minutes before removing from pan to a wire rack.

  9. Enjoy with tea, coffee, or just on their own!
