Brown Sugar Shortbread Cookies
These melt-in-your-mouth cookies only need 3 ingredients and are SO worth the calories!
Ingredients
1 cup butter, softened
1/2 cup packed brown sugar
2-1/4 cups all-purpose flour
Instructions
Preheat oven to 300°F.
In a large bowl, cream butter and sugar until light and fluffy. If you don’t have a hand or stand mixer, you can just use a big wooden spoon to stir. Make sure to put in all your energy!
Gradually stir in flour and mix well. Turn onto a lightly floured surface and knead until smooth, about 3 minutes. Pat into a 1/3-in.-thick rectangle measuring 11 in. x 8 in.
Cut into strips and place 1 inch apart on a baking sheet lined with parchment paper.
Prick with a fork and make whichever pattern you like! Sprinkle brown sugar on top.
Place sheet into freezer for 10 minutes.
Take out and place into the oven.
Bake at 300°F for 25 minutes or until bottoms are lightly browned. Cool for 5 minutes before removing from pan to a wire rack.
Enjoy with tea, coffee, or just on their own!
