Bruschetta

Fresh. Quick. Tasty.

Ingredients:

  • Tomatoes (We used cherry tomatoes but any sweet tomato will do)

  • Mozzarella 

  • Basil

  • Salt 

  • Pepper 

  • Balsamic 

  • Garlic Cloves (about 3)

  • Baguette 

  • 1/2 cup Olive Oil

  • Balsamic Glaze (Optional for Garnish) 

Instructions:

  1. Preheat oven to 400 degrees F. 

  2. Finely chop tomatoes, mozzarella, and basil and put in a medium bowl

    **The quantity is up to you, but you can aim for an even amount of tomatoes and mozzarella and adjust to personal preference.

  3. Add 1/4 c. olive oil to a small bowl and 2 crushed garlic gloves. Set Aside. 

  4. Slice baguette and place on a baking sheet. Drizzle slices with olive oil garlic mixture. Place in oven for 5 minutes or until golden.

  5. While bread is baking, add in salt, pepper, remaining olive oil, remaining crushed garlic, and balsamic vinegar to the tomato mixture (adding more or else to taste). 

  6. Assemble the Bruschetta by placing a generous amount of tomato mixture on each slice of  bread (you can eyeball it but it should be around a tablespoon). 

  7. Serve immediately. Feel free to drizzle a balsamic glaze over the top for an added sweetness.
